Whole Wheat Pecan Banana Muffins

A fluffy and wholesome muffin recipe, these Whole Wheat Pecan Banana Muffins are naturally sweetened with banana and maple syrup and every bite includes a delicious crunch thanks to nutrient-dense pecans

Ingredients: (cupcakes)

  • 2.5 cups flour

  • 1/2 cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1 cup butter, softened

  • 1.5 cups sugar

  • 4 eggs

  • 1/2 cup milk

  • 1 cup sour cream

  • 2 teaspoon vanilla extract

  • 1 ounce red food coloring

Ingredients: (buttercream frosting)

  • 4 cups powdered sugar

  • 1 cup butter, softened

  • 3 teaspoons vanilla extract

  • 1-2 tablespoons milk


  • Step 1: Preheat oven to 350 degrees F

  • Step 2: Mix flour, cocoa powder, baking soda and salt in a medium sized bowl; set aside.

  • Step 3: Beat butter and sugar for 5 minutes or until light and fluffy. Beat eggs in one at a time. Mix in milk, sour cream, food coloring and vanilla, beat until just blended.

  • Step 4: Spoon batter into pre-greased muffin pans.

  • Step 5: Bake 20 minutes or until a toothpick comes out clean.

  • Step 6: Let your cupcakes cool completely. In the meantime, make the frosting.

  • Step 7: Put all frosting ingredients in a mixer bowl.

  • Step 8: Start mixing on your mixer's lowest setting, only raising the speed when the butter and sugar are fully incorporated.

  • Step 9: If your frosting is dry add some milk.

  • Step 10: Frost your cupcakes with the buttercream frosting. Top with red sprinkles.
